Wheat and Gluten free Flours

Good morning! Here is a list of Wheat and Gluten free flours.

amaranth flour

I was surprised to find out how many different flours there actually are and a whole long list to choose from for the purposes of the 21 day cleanse. Many wonderful websites packed with information on this subject. One I found that I liked is the Canadian Celiac Associations site and the gluten free club. www.glutenfreeclub.com
If a person is serious there are allot of different choices out there we just have to look for them!

Kathy talks about Gluten in the book and here are some notes from that section.

Gluten: gluten is a protein found in many foods, including wheat, barley, rye, and malt is the most common irritant of the small intestine. Symptoms of irritation from gluten vary in degree from person to person. Consumption of gluten can cause the immune system to attack the small intestine through inflammation. Which in turn can cause gas, diarrhea, skin rashes, the bodies ability to absorb nutrients, which can lead to depression and exhaustion. A gluten heavy diet may contribute to osteoporosis and anmenia. Gluten is hard to digest and can leak undigested into the bloodstream. There is now some studies that have been done in England, Norway and the University of Florida that suggest that a diet high in gluten is a major contributing factor to Autism..Which makes sense because I have always believed that so many of the behavioural problems and illnesses in children is diet related. Gluten of course makes it hard for your body to absorb nutrients! Further studies suggest that anything the body can interpret as an opiate can become addictive and gluten is a major culprit, behaving like a powerful, mood-altering, brain-damaging drug. Abstaining from gluten for the period of your cleanse will allow the small intestine to soothe and heal itself, reestablishing its efficient absorption of nutients. You will feel more energized, alert, and nourished.
